Tea Guides & How-To

Brewing fundamentals, water temperatures, caffeine, storage and everything you need to get the best from every cup.

About this category

Everything you need to make the most of your teas and infusions.

Making great tea is as much about how you brew it as where it comes from. There is no single definitive way to make tea, and everyone has their own ritual. But the same leaves can give you a bright, fragrant drink or a flat, bitter one, and the difference usually comes down to a few simple things: water temperature, steeping time, how much leaf you use, and the water itself. Our guides cover all of that in plain language, without the complex terms or the mystique – just clear, tested advice you can put to use with your next pot.

Whether you simply throw a tea bag in a cup, you're brand new to loose-leaf, or refining a ritual you've kept for years, this is the place to get the fundamentals right. You'll find how-tos on brewing each type of tea, notes on caffeine and how it varies, the truth about re-steeping leaves, and how to store tea so it stays fresh for as long as possible. We've written them to answer the questions we're actually asked at our Edinburgh Tea Studio, so they tend to cut straight to what matters.

A good first step is to understand what tea actually is. Begin with an introduction to the tea plant and the six categories of tea, then work through the brewing guides for the teas you drink most. Get the basics right and everything else in the journal – the origin stories, the recipes, the seasonal blends – will taste better for it. Small adjustments make a big difference in the cup.
