Have you ever wondered what defines tea? What counts as tea and what doesn’t? In short, tea must come from the Camellia sinensis plant. All the wondrous varieties of tea in the world, whether green, black, or oolong, come from this one species of plant. In this article we explore this plant in detail. We’ll look at where it comes from, the unique conditions it grows in, and some of the challenges the plant is facing.

Matcha is green tea that is ground into a powder and traditionally added to water and whipped into a frothy drink. It originated in Song dynasty china and is also strongly associated with the tea culture of Japan. Matcha is delicious, wakes you up, and has many health benefits, so it’s no surprise that its popularity is growing. Matcha is also a delicious and versatile ingredient, adding a unique sweet flavour to cakes, pancakes, ice cream, or lattes.
On your tea drinking journey you’ll often come across terms like 'Pre-Rain' and 'First-Flush' while exploring different varieties of tea. These terms refer to the harvest time of the tea leaves, which greatly influences the tea's flavour and character. This article explains what these terms mean.
