Simple & Delicious Iced Matcha Recipes
I have become addicted to iced matcha lattes since launching them at our Leith tea studio a few weeks ago. They are sweet, refreshing, and give me a boost without making me jittery, so I’ve started making them at home on my days off. If you want to enjoy delicious iced matcha lattes in your own kitchen, then read on for our recipes. I’ll talk you through making a pure iced matcha latte, and an iced matcha latte flavoured with some of our popular teas and tisanes: Leith Lights, Blue Lady, and Blend No. 3.
The Classic:
This recipe lets the sweet vibrant flavour of our matcha shine through, balanced perfectly with creamy oat milk.

What You'll Need:
- 2 grams PekoeTea Cooking Matcha
- 70ml water heated to 80°C (Using water that's too hot can make matcha bitter)
- Half a cup of ice cubes
- 200ml - 250ml oat milk (or your favourite milk alternative/dairy milk)
Method:
- Sieve the matcha powder:This is an optional but recommended step. Use a small tea strainer to sieve the matcha powder into a bowl to remove any lumps.
- Whisk the matcha: In a small bowl or matcha bowl (chawan), combine the matcha powder and the 80°C water. Whisk vigorously with a bamboo whisk or 'chasen' in a 'W' motion until the matcha is fully dissolved, smooth, and frothy. Ensure there are no clumps. You can also use a small electric hot chocolate whisk.
- Prepare your glass: Fill your favourite glass halfway with ice cubes.
- Pour milk: Pour the oat milk over the ice.
- Top up: Gently pour the matcha over the milk and it should float on top to create pretty layers.
- Stir & enjoy: Give it a gentle stir to combine, sip, and relax!
Flavoured Iced Matcha Lattes (Leith Lights, Blend No.3 & Blue Lady)
Ready to add a twist? This method infuses the distinct character of our other beloved teas into your iced matcha for a truly unique beverage. Here's how to make our Leith Lights, Blend No.3, or Blue Lady iced matcha variations at home.
What You'll Need:
- For the Tea Infusion:
- 5 grams of PekoeTea Leith Lights, Blue Lady, or Blend No. 3
- 100ml of boiling water
- 2 full teaspoons of honey
- For the Matcha Base:
- 2g cooking matcha
- 200ml oat milk
- 60ml water heated to 80 degrees
Method:
- Infuse the tea: Place your chosen tea (5g) in an infuser or teapot. Pour over the 100ml of boiling water. Steep for 5 minutes.
- Sweeten & strain: Once steeped, strain the teas and stir in the honey until dissolved.
- Prepare the matcha: as above - sieve, combine with water, whisk until frothy.
- Prepare glass: Fill a tall glass halfway with ice cubes.
- Layer: pour the sweetened tea infusion over the ice.
- Add milk: slowly pour the oat milk to float on top of the sweetened tea.
- Top up: Finish by gently pouring the whisked matcha over the milk layer.
- Stir & Savour: Observe the pretty layers, then stir everything together thoroughly before taking your first delicious sip!
What Do They Taste Like?
- Leith Lights Iced Matcha: earthy, medicinal, and zesty.
- Blend No.3 Iced Matcha: earthy, herbal, and tropical.
- Blue Lady Iced Matcha: fragrant and floral.

Tips for A Perfect Iced Matcha:
- Quality Matters: Using good quality Cooking Matcha and fresh flavoured tea makes all the difference.
- You Don’t Need Ceremonial Matcha: ceremonial grade matcha is typically more fragrant and has a stronger umami kick than cooking grade matcha. However
- Keep your matcha in the fridge: Matcha powder oxidises very quickly. Keep it fresh by keeping it sealed and storing it in the fridge.
- Whisk Well: Proper whisking incorporates air and prevents clumps, creating a smoother drink. I recommend watching a video on YouTube to learn the proper technique.
- Temperature Control: Remember the 80°C water for making the matcha – boiling water can make the tea a lot more bitter.
- Sweetness: Adjust the honey in the sweetened tea to your personal preference. Keep in mind that if you reduce the amount of honey, the milk layer probably won’t float.
- Milk Choices: While we love oat milk, feel free to experiment with almond, soy, or dairy milk.
