June is here and for us at PekoeTea that means Ice Tea Season. Jon and I have been experimenting in the kitchen to create a delicious range of ice tea recipes for you to try at home (or at the beach!) this summer.
Our first is a classic, using our Peach Sencha (peach green tea), adding some freshly grated ginger for a real zing and some cloudy lemonade is how I created this really refreshing summer drink.
It's really easy to make and a great alternative to alcoholic cocktails. Have it as a picnic drink or serve in the evenings as a classy mocktail.

Ingredients for Pekoe Tea Peach Sencha Ice Tea
2 tbs PekoeTea Peach Sencha
1.5cm piece of root ginger freshly grated
1 litre freshly boiled water
cloudy lemonade for mixing
2 ice cubes per glass
1 whole peach for garnish
Place the PekoeTea Peach Sencha and the freshly grated ginger into a large heatproof jug.
Pour over the boiling water and give it a stir then let it infuse for 10 minutes
Strain into another large jug and leave to cool down.
Once at room temperature place the tea in the fridge for at least 1.5 hours
Meanwhile cut the peach into a long spiral strip for the garnish.
Once the tea is cold, arrange the peach and some ice in a tall glass and pour over the chilled tea to 2/3 full then top with the lemonade.
