Books, tea and cakes go so well together. Today we're sharing with you a recipe for this easy vegan lemon & poppy seed cake created by one of our new staff members Ewa. Whether you're vegan 24/7, just trying it for a month or not vegan at, you'll love a slice (or let's make it 3 slices) of this beauty.

Ingredients:

  • 275g self-raising flour
  • 200g sugar
  • 100ml vegetable oil
  • 1 tsp baking powder
  • 1 lemon (zest + juice)
  • 2 tbsp poppy seeds
  • icing sugar
Method: Mix the flour, sugar, baking powder, poppy seeds and lemon zest in a bowl. Add the oil, lemon juice and 170ml cold water, then mix until smooth. Pour into the tin (lined with baking paper) and bake for 30 minutes at 200C. Allow it to cool, dust with icing sugar, make yourself a nice cup of tea (Ewa recommends paring it with Duchess Grey), get your book ready and enjoy!
